Black and whites can be a great way to show off a photo. I personally love photographs that show a wide range of grays so that way you are not just looking at a bland and lifeless photo. If you have lots of contrasting parts of the image it brings to life that points of focus. There are images that do well with less contrast and more similar shades of gray but make sure you have a great subject to make it work well for that purpose.
Here are gray tones to think about in your images. In the film world, this was a huge deal that you had to pay attention to before you started shooting images because film cost much more and if you didn't get the image done well after just the first couple you would end up spending a lot of money trying to get the right tones. In the digital world if you don't hit it dead on the first time it is more likely that you can change the tones after the fact in photoshop or whatever program you choose to use.
If you don't pay attention to the gray tones you can end up with a very flat image.
